DEFINITION

Classification: 426/312

(under the class definition) Processes wherein an exteriorly produced gas contacts a solid or liquid food material for any purpose.

(1) Note. "Gas" for purposes herein includes vapors, mist or smoke.

(2) Note. Excluded herefrom are CO2, air, steam, nitrogen, the inert gases, or mixtures composed solely of any of the above; or the use of the above gases as carriers for nongaseous materials. Absent any disclosure to the contrary "gas" will be taken to mean one of the gaseous materials excluded above. Also excluded from this subclass is the production of a gas by an "in situ" reaction wherein the reacting medium is in physical contact with the food, as well as treatments of food with a gas derived from a similar food or from a food to which it is closely related.
