DEFINITION

Classification: 426/244

(under subclass 237) Processes wherein (1) a food material is heated in a dielectric manner; or (2) wherein a food material constitutes a portion of an electric circuit and current is passed though said food material.

(1) Note. Dielectric heating involves the placing of a low conductive food in an alternating electric field, the heating of the food involving the periodic loss of electrons from within the food caused by the alternating electric field.
